Here are some projects in menu planning and dining experiences that I have created.

Each menu is built around a theme or a story that I love to share, and this narrative is reflected throughout every single dish.

The Silk Road

This menu centres around the rich use of spices and how they were traded and used along the historic Silk Road.

It’s fascinating to remember that the Silk Road wasn’t solely about silk, as its name might suggest. It was one of the most important trade routes for spice merchants, connecting the East to the West.

In every dish, I highlighted a unique spice and its origin, drawing attention to how these flavours travelled and evolved across cultures.

Ordinary delicacy

This menu celebrates the beauty of simplicity by showcasing fresh Portuguese ingredients sourced directly from local markets.

The inspiration was to capture the essence of these seasonal treasures and build dishes that feel as though they’ve come straight from the market to the table.

Each plate focuses on clean, fresh flavours, allowing the natural quality of the ingredients to shine while paying homage to the vibrant food culture of Portugal.

Christmas feast

This menu reimagines traditional Christmas fare through the lens of African ingredients and culinary traditions.

I played with familiar festive elements while introducing bold, earthy flavours—using bush meat, select seafoods, and unexpected textures.

One of the highlights was a creative twist on seasonal fruits, transformed into a smooth leather-like texture, adding both surprise and depth to the dining experience.
